Reminiscing Childhood

Some of you may know that I am a sucker for anything pineapple coconut flavored. As a kid, I loved this flavor combo and the feeling didn’t end as an adult. Whenever my parents would take us out for a special dinner in a restaurant, they would allow me to order something fancy to drink. As a little kid, how fun is that? Looking through the drink menu at all the bright colored, fruity, flavorful drinks. And what would I almost always get?

A virgin piña colada.

A virgin strawberry daiquiri was a close second, but the pineapple coconut goodness almost always won out. And don’t get me started about how exciting it was to get all that extra whipped cream. Seems like bartenders know how to make a drink even extra special for a kid. Pretty sure they would often add way more whipped cream than normal. Lol!

So, it’s no surprise that I am a fan of piña colada smoothies too. Last summer (2020) when I was home quarantining with our newborn, I got a craving for something in the pineapple coconut realm. I had actually purchased a big pineapple for another recipe I was creating and I had lots of extra leftover. So I tossed it in the blender with some coconut milk and a few other things and it was everything I wanted.

It was so delicious and refreshing that I knew I had to share it with you guys!

Toasted Coconut Pineapple Smoothie Recipe Notes

As with all smoothies, you are welcome to customize this any way you like. Smoothies are awesome like that, am I right?

Since the pineapple is going to be pretty high in sugar I like to make sure I have plenty of fat and protein to go along with it to help keep my blood sugar from going to cattywampus. That’s why I recommend using FULL FAT coconut milk in it.

It adds a great amount of protein and doesn’t affect the taste. You are welcome to add any protein powder of your choice, but keep in mind the flavor may change.

If you tolerate eggs and have a good source that you trust, you could most definitely add a raw egg or two without it affecting the taste at all. I know not everyone likes the raw egg thing, but there are still some people who prefer that as their protein source in smoothies.

Also, you could easily add some greens to this too without affecting the taste too much. I’m not a huge fan of green smoothies, as I think they are overrated as far as nutrition goes. But on occasion, I do enjoy a green smoothie. If I am going to do greens, I try to add them to a smoothie after they are cooked. This helps improve digestibility and minimize some of the anti-nutrients. The fermentation process also helps improve digestibility and decrease the anti-nutrients.

As far as sweetener goes, depending on how sweet you like it, you could add a few drops of stevia liquid if needed. If you have a super sweet pineapple, then this is probably not necessary. But if it’s a bland pineapple you may need a little kick of sweetness added.
