Awhile back you may remember that I shared my classic banana pudding recipe with you. I hadn’t had banana pudding in years, probably 20+, so I had to redesign it to suit my dietary needs (gluten and dairy-free, plus reduced sugar if possible).

I’d say the end result was pretty amazing… And the process of developing it was delicious. I certainly got my fill of that rich, creamy, dreamy dessert!

But even that dessert was not as delicious as today’s recipe, let me tell you. Today’s bananas foster pudding is absolutely divine. I’ve always loved bananas foster (check out my crazy simple bananas foster recipe here) and when you combine that with banana pudding you have a truly decadent dessert.

This is the type of dessert you make when you want comfort food with a twist. Serve it to your family and friends and I guarantee it will be a big hit. Bananas Foster Pudding Ingredient Notes

This recipe really is a combination of a few different recipes. My vanilla cream pudding recipe is used as the base and then you make a batch of bananas foster to use in place of the sliced bananas.

As far as cookies go, classic vanilla wafers are going to give it the most authentic taste. But finding gluten-free vanilla wafers proved to be a bit challenging. There really are not many options available to us. At some point, I’d love to experiment and try to make my own but until then, these are the ones I’ve used. This was the only brand I could find locally. I found this brand online later, but have not tried them yet.

Traditional bananas foster uses a splash of rum in the recipe. I personally forgo the alcohol in my recipes as I don’t tolerate alcohol well and never have any in the house. But you could definitely toss a splash (or two) in here if you prefer and the recipe will come out deliciously. 

If your pudding gets lumpy, you can either run it through a mesh strainer or sieve. Or you can do what is o and use your immersion blender to whiz it up after you take it off the heat. This will give you a super smooth, creamy end product and is my favorite way to get silky pudding.

  1. Prepare your vanilla pudding. When it's done, spoon it into your serving dishes and add a layer or two of vanilla wafers in there if desired. Put in the fridge to cool completely. You could also make this in one main serving bowl too.
  2. When you are ready to serve the dessert, saute your sliced bananas, maple syrup, and butter until soft.
  3. Remove from heat and stir in the vanilla extract.
  4. Spoon the bananas foster on the top of the pudding and top with whipped cream and crushed vanilla wafers if desired.
  5. Serve and enjoy!
