Everyone loves classic mac and cheese. This easy One Pot Cauliflower Mac and Cheese is sure to be a family favorite. It’s creamy, melty, cheesy and oh so delicious! 

Mac and cheese has been around forever. It’s known for being pure comfort food in the United States and has been served on family and holiday tables for many years. While pasta and cheese dishes have been popular since the 14th century, macaroni and cheese wasn’t really a “thing” until the 1700’s (source). And boy did it become a hit!

Traditionally, macaroni and cheese was a casserole dish made with a homemade Béchamel sauce, but over time it became a stove-top staple.

I’m sure many of us, me included, grew up on the box kind that comes in that blue box. You know what I’m talking about. It was my absolute favorite as a kid. I even had a childhood friend who gave me boxes of it for one of my younger birthdays – I think my 4th or 5th. Kind of funny.

The store-bought kind is not real food and it’s heavily processed. Sticking to homemade mac and cheese is the way to go!

Mac and cheese can be made so many different ways but it’s important to stay true to the traditional, beautiful, creamy, delectable cheese sauce. Usually the cheesy Béchamel sauce is made with a flour based roux.

But not this version! The beautiful part about this Cauliflower Mac and Cheese is you make it in ONE POT! And you don’t have to make a roux! How easy is that?!

I love simple meals that only use one pot for the whole cooking process. It makes cooking so much easier and quicker in my opinion.

How to Make Cauliflower Mac and Cheese

This one pot meal is so easy to make. All you need is a large saucepan or medium stockpot and you’re good to go. Get your pasta going in a salty, buttery, boiling bath of milk and bone broth, cook for a few minutes then add in your cauliflower florets for the remainder of the cook time.

Before you know it the pasta and cauliflower will be cooked to perfection. Add in a bunch of grated cheddar cheese, some cream cheese and a little bit of Parmigiano-Reggiano and Gruyère. Stir up the glorious pot of cauliflower mac and cheese and serve this deliciousness right away. Make sure to lick the saucy spoon too … it’s so worth it.

Easy One Pot Cauliflower Mac and Cheese

Everyone loves classic mac and cheese. This easy One Pot Cauliflower Mac and Cheese is sure to be a family favorite. It's creamy, melty, cheesy and oh so delicious!

Instructions

  1. Add milk, bone broth, butter, and sea salt to a large saucepan or medium stockpot. Bring to a boil over medium heat.
  2. Add pasta and cook for 3 minutes, stirring occasionally.
  3. Add cauliflower florets and cook until al dente, about 7 minutes, stirring occasionally.
  4. Remove from heat.
  5. Add cream cheese and grated cheeses, stir until fully combined.
  6. Allow to sit 5 minutes before serving.
