I am so delighted to shine some light on rhubarb for you today!
Spring and early summer typically bring lots of excitement over fresh produce after the long, cold winter, and so many of us look forward to fresh asparagus, peas, radishes, and strawberries. I had never cooked with rhubarb before I met my now father-in-law, who grew it in his backyard.
He showed me how heartily and easily it grew just about anywhere, and I was hooked! I ended up taking a few shoots home to re-plant myself and used what we picked from his garden to start learning how to use it! I happened to just get new ice pop molds around then so I started out with making strawberry rhubarb creamsicles.
But then after realizing just how heartily it grew, I figured out some other ways to use it up other than dessert such as using it in honey rhubarb granola for breakfast. It is actually quite versatile!
Rhubarb has some pretty cool health benefits too! In addition to being loaded with vegetable fiber, rhubarb is a really great source of vitamin K and calcium.
Slightly sweet and somewhat tart, rhubarb tastes best when cooked, though my 6 year old will tell you one of her favorite ways to eat it is fresh and raw right out of the garden! She barely even puckers! Rhubarb is actually a vegetable though many people use it in combination with fruit to make sweet desserts. I am really excited about showing you both the sweet and the savory ways you can use rhubarb!
