She took a few minutes out of her day to stop by and share this delectable recipe for Grilled Salmon with Chipotle Butter. I love salmon and this recipe sounds divine! ~Jessica}

Summer time in the Pacific Northwest where I live means lots of salmon will be hitting the grill.

This recipe cooks up quick and is loaded with healthy fats and inflammation fighting Omega-3s.

Finish the dish with a few slices of avocado, fresh cilantro and a squeeze of lime juice over the whole plate.

Grilled Salmon with Chipotle Butter

  1. Preheat the grill to about 400°F to 450°F and season the salmon fillets with the salt, chipotle chili powder and ground coriander.
  2. When the grill is hot, lay the seasoned salmon flesh side down and grill for 4 to 6 minutes.
  3. Turn the salmon once, grilling the skin-side down for an additional 4 to 6 minutes, depending on thickness.
  4. While the salmon is grilling, combine the room temperature butter with a pinch of sea salt and the finely chopped chipotles in adobo. Use a spoon to mix until the chipotles are evenly distributed throughout the butter. Set this aside at room temperature until the salmon is ready.
  5. Once the salmon is done, remove it from the grill and add a dollop of chipotle butter on top. As the butter melts, spicy chipotle will run throughout the salmon, offering a silky kick to each bite.
  6. Finish the salmon with a sprinkle of chopped fresh cilantro and a squeeze of fresh lime juice. It's the perfect touch to round off a simple and savory grilled salmon dish.
