Going Gluten Free?

Last week, I wrote about gluten. A small particle of food that can have devastating effects on our health.

I have been gluten free for over a year now, a change that was prompted by an autoimmune disease diagnosis in 2012. When initially tested (while I was still eating gluten), my antibody levels were off the charts. The very first thing my practitioner told me I had to eliminate was gluten. Within a few months, my antibody levels dropped substantially. Within 6 months, they had dropped even more. It was obvious to me that gluten was indeed directly tied to my autoimmune disorders.
