Roasted Cauliflower with Olive Oil, Garlic and Parmesan

  • 1 head of cauliflower, washed and separated into florets or bite-sized pieces
  • 3 tbsp. olive oil
  • 1 tbsp. chopped garlic (or more if you're like me and love garlic)
  • ¼ cup shredded Parmesan
  • ¼ tsp. sea salt
  • ¼ tsp. fresh ground black pepper
  1. Preheat oven to 350.
  2. In a large bowl with a lid, combine the cauliflower, olive oil, garlic and salt and pepper.
  3. Put the lid on and shake around until everything is coated.
  4. Spread mixture on a baking sheet and sprinkle with Parmesan.
  5. Roast in oven for 10-15 minutes or until tender.
