Curry Chicken Salad with Apples and Pecans
Serves: 4
  • 2 boneless, skinless chicken breasts (about 1 pound), baked
  • 4 stalks of celery, diced
  • 1 apple, diced
  • ¼ cup diced red onion
  • ⅓ cup of good quality mayonnaise (homemade is best)
  • 1 Tablespoon sweet curry powder
  • 1 Tablespoon Dijon mustard
  • Sea salt and freshly ground black pepper to taste
  • Small handful of chopped pecans (soaked and sprouted)
  • Optional, but delicious: Greens or salad mix of any kind. This is especially delicious over baby lettuce and arugula.
  1. Combine all of the above ingredients (except pecans) in a large bowl and mix well to combine.
  2. Top with pecans.
  3. Enjoy!!
