Everyone needs a great brownie recipe and an easy one to boot. Not only is this recipe for Easy Caramel Swirl Blender Brownies a cinch to make, but the caramel sauces take the blender brownie to a whole new level. Make this delicious dessert extra special with a scoop of ice cream or a dollop of fresh whipped cream.
You guys, recipes don’t get easier than this. The hardest part of this recipe is waiting for the caramel sauce to simmer and reduce. But even that is really not hard because you can, for the most part, set it and forget it.
If you’ve known me for any amount of time, you know I’m a pretty big chocolate fan. I love chocolate by itself, but I adore chocolate when paired with caramel. Always have, ever since I was little. Rolos and similar candies were a HUGE treat for me when I was a kid (especially since I didn’t get much sugar or junk food growing up).
After my little one was born in 2020, life got a lot busier. I assumed I’d be able to get back to “normal” at some point and still have plenty of time to create new recipes and write blog posts.
Well, life didn’t go that way. At all. Almost 3 years later and life is still not “normal”.
Must Be Easy and Delicious
Getting new recipes created and posts up on the site has been challenging. I found that parental life is very much like riding the waves of an ocean. I occasionally have times when I have plenty of time and energy to create new recipes, write the posts, and do the million other things that go into publishing one single recipe. And then there are weeks (or months) when nothing new got created.
So here we are.
Riding the waves of motherhood and hanging on for dear life. LOL!
Anywho, one thing that has been super helpful for me during this journey is to revisit the recipes I have and figure out new ways to make them. Sometimes I end up totally recreating the recipe, but other times I am able to make some tweaks or new additions to an existing recipe and come up with something new and delicious.
Did I mention that my criteria are always two simple things:
- Must be easy.
- Must be delicious.
And that is how this recipe for Easy Caramel Blender Brownies came about. I needed easy and I needed delicious. And this recipe delivers both.
Before we go further, shout out to my sweet friend Raia from Raia’s Recipes. I based this recipe on her insanely popular Death by Chocolate Blender Brownies, which is one of the most popular recipes on this site.
Notes About Easy Caramel Blender Brownies
This recipe is super simple so there are not a whole lot of notes to share here. But I did have a few things I want to mention.
Make the caramel sauce first so you can swirl half of it into the brownies. You’ll use the rest for topping. The caramel sauce will melt into the brownies, but you’ll still get all the delicious flavor.
To me, the bananas in the brownie recipe can’t really be tasted. But other people found the banana flavor to be too strong (or they are allergic), so if that is you, use my Banana Free Blender Brownie recipe here.
If you’re not keto or low carb, you can most definitely use regular sugar in the caramel recipe. I choose to use allulose over other keto/low-carb sugars because it doesn’t crystalize and get funky as I explain in this post.
If you don’t have a blender, a food processor will work.
Make sure all of your ingredients are at room temperature. It makes a big difference.
When I have it on hand, I love to make my brownies with half black cocoa for a deeper black color. Black cocoa powder is the stuff they use to make Oreo cookies that dark black color. But you can always use all regular cocoa if you like — that’s usually all I have on hand whenever the brownie craving hits. I don’t recommend all black cocoa though because it does change the texture and flavor.
Maple syrup will work in place of the honey if you prefer.
Easy Caramel Blender Brownies :: Gluten-Free, Grain-Free, Dairy-Free Option
Ingredients
- 1 batch of my Sugar-Free Salted Vanilla Bean Caramel
- 1 cup mashed banana (about 2)
- 1/4 cup raw honey or maple syrup
- 2 eggs
- 2 tsp vanilla extract
- 2 tbsp coconut milk
- 2 tbsp melted butter (can use ghee or coconut oil, but butter gives the best flavor)
- 1/2 cup regular cocoa powder
- 1/2 cup black cocoa powder
- 1/8 tsp sea salt
- 1/2 tsp baking soda
- 1/2 cup chocolate chips of your choice (see note below)
Instructions
- Prepare the Sugar-Free Salted Vanilla Bean Caramel Sauce. Remove from the heat and let cool some before using.
- Preheat the oven to 355 and grease a 9x9 inch baking dish.
- Place everything in the blender, except the chocolate chips, and puree until smooth.
- Pulse in chocolate chips (but don't completely blend them up).
- Spread batter into the prepared dish. Swirl in half of the caramel sauce. I drizzle the sauce over the batter and then swirl it in with a butter knife.
- Bake for 25-30 minutes or until a knife comes out clean.
- When the brownies are done, let them cool for about 20 minutes before removing them from the pan.
- Drizzle the sliced brownies with the extra caramel sauce and serve. Feel free to add whipped cream, ice cream, nuts, sprinkles, or whatever else tickles your fancy!
Notes
Depending on the type of chocolate chips you use, there can be a lot of added sugar in them. I prefer to use Lily's brand chocolate chips which are only sweetened with stevia and erythritol. Some people have told me they have used an unsweetened dark chocolate bar that has been chopped in place of chocolate chips and then added a little extra stevia or sweetener of their choice to off-set it. Feel free to adjust however suits you!
