Not only do they taste better, but they also won’t leave your belly all in an uproar!
Can we just talk about one of the most popular cookies out there — Thin Mints® — today?
How many of you love these thin, chocolatey mint cookies as much as I do? I have eaten many Thin Mints® in my day, though I can honestly say that I have not had one in almost 10 years as I write this post.
When I was first diagnosed with autoimmune disease, I started cleaning up my diet and paying attention to ingredient labels. Once I started reading labels, I just couldn’t bring myself to eat those tasty cookies anymore. There sure was a lot of stuff in there that didn’t really need to be there.
Plus, since my body does not tolerate gluten, dairy, and refined sugar very well, well, that doesn’t leave me with much of a choice but to give up those sweet Thin Mints®. The stomach aches, headache, and neck ache (one of my diary exposure symptoms) are just not worth it.
But you know what? Just because I can’t eat the traditional Thin Mint® cookies anymore doesn’t mean I have to give them up altogether.
Nope, it does not!
Whenever I have to cease enjoying one of my favorite foods (chronic illness sucks sometimes 😭😭😭), I always head right to the kitchen and start experimenting with ingredients. The sole mission? To make a real food, gluten, grain, and dairy-free version that tastes just as good (if not better!) than the original.
You know, I honestly think I knocked it out of the park with this recipe.
Like way, way, WAY out of the park.
- A crispy cookie that’s gluten, grain, dairy, and refined sugar-free? CHECK!
- A silky mint chocolate coating that’s also gluten, grain, dairy, and refined sugar-free? CHECK!
- A cookie that tastes better than the original? Well, CHECK, if I do say so myself!
I tested and tested this recipe to make sure I got it perfect. My tastebuds still remember the taste and texture of those traditional Girl Scout® cookies, even a decade later. So I knew this was not a recipe that I could just whip up one batch of and call it good.
No. I made batch after batch after batch.
I made so many that I actually got sick of eating them.
Which, if you know anything about my sweet tooth, is saying a lot! 😉
