Panna cotta is Italy’s version of pudding, also known as “cooked cream.” It’s traditionally made with cream, milk, sweetened with sugar, thickened with gelatin, and usually infused with flavorings like vanilla, lemon, or coffee.

This real food strawberry panna cotta version doesn’t have any refined sugars! You won’t find any generic gelatin in there either! And you can even make it dairy-free!

If you’re like me and love puddings, curds, and custards, then you’re going to LOVE panna cotta! There’s nothing like that amazingly, smooth, luscious texture of chocolate pudding, lemon or lime curd, lemon custard, or pumpkin mousse.

I go crazy for these yummy sweet treats. I love to enjoy them as an afternoon snack since they’re full of healthy fats, and in the case of panna cotta, good-for-you, gut-supporting, grass-fed gelatin. It helps curb a sweet craving and fills me up when I need a little boost to get me through the rest of the day.

Strawberry panna cotta only takes 10 minutes to make!

Here’s the great part of about panna cotta – it’s super easy to throw together in minutes! The panna cotta only takes 10 minutes to make. After you let a little bit of the milk and gelatin sit, then gently warm it until the gelatin dissolves, all you have to do it toss everything into the blender and give it a quick blend. That’s it!

So easy, right?! That’s why it’s one of my favorite snacks or sweet treats to make … because it takes very little time to throw together and time is precious.

Once it’s fully chilled and set in the refrigerator, all you need to do is make a quick strawberry compote that takes minutes on the stovetop. Then pour that on top of the panna cotta and let it chill some more.

Instructions

  1. Place 1/2 cup coconut milk or milk in a small saucepan and sprinkle the gelatin over the top of the milk. Let the gelatin sit for 5 minutes then give it a stir and heat over low heat until the gelatin is dissolved, about 3 minutes.
  2. Pour the remaining milk, cream, sweetener of choice and vanilla into a blender.
  3. Blend for a few seconds, just until combined. With the motor still running, pour the warm gelatin mixture into the blender through the blender top opening. Blend for about 1 minute until the mixture is fully combined and smooth.
  4. Pour panna cotta mixture into small glass jars or one large, shallow dish. {I was able to fill a mixture of 7 small and medium jars.} Place in the refrigerator for a minimum of 2 hours to set.
  5. While the panna cotta is chilling, make the strawberry topping. In a small saucepan, heat strawberries and sweetener of choice over medium-low heat until the strawberries begin to break down and look like jam, stirring occasionally about 5-7 minutes. When the strawberries are jam consistency, sprinkle the gelatin over the top and stir constantly until gelatin is dissolved, about 1 minute. Remove from heat and allow to cool while panna cotta is chilling.
  6. When the panna cotta is set, evenly distribute the strawberry topping over the top of each individual panna cotta (or over the top if using one large shallow dish).
  7. Place back in the refrigerator and chill for at least 2 hours, best overnight for extra cold panna cotta.
  8. Enjoy it cold right from the jar!

Notes

For a different spin, try this Strawberry Panna Cotta frozen! Freeze the fully set Strawberry Panna Cotta for 2-5 hours for an extra special, creamy, icy treat. I highly recommend this, it's absolutely delicious this way! It tastes similar to a strawberry swirl ice cream.

I prefer to eat panna cotta with a spoon right out of the jar. If you'd prefer to invert it on a plate, make sure to grease your jars or ramekins with coconut oil before filling them.
