Lime Bars are refreshing, tart and perfectly sweet with a buttery, rich shortbread crust.
I love lemon bars. Who doesn’t love the classic lemon bar cookie? They’re delicious and the perfect spring treat. But have you ever had LIME BARS?
Now don’t get me wrong, I still love good old fashioned lemon curd. It’s delicious and I love to eat it by the spoonful. Add that silky deliciousness to a shortbread cookie bar, and oh my goodness, you have a winner.
If you love lemon curd and lemon bars, you’re going to love tangy, luscious lime curd slathered on top of shortbread squares.
Lime Bars are a beautiful thing.
My mom didn’t bake a lot, in fact, most of her baking started with box mix bases that she turned into pretty magical baked treats. And I loved them. But one thing that she did make from scratch was lemon bars {we called them lemon squares}.
I used to look forward to that extra special treat. She always made them for Mother’s Day. I can still see her dusting the tops of the lemon squares with powdered sugar. Such a fun memory.
I love how food can instantly take you back to fond memories. With the month of May here, I find myself thinking about my mom even more and missing her so much. Sometimes soothing the soul calls for recreating special childhood treats.
In honor of my mom, I decided to recreate one of her favorites. Of course, I had to real food-ify it, omit the powdered sugar, and mix up the flavor a bit with LIME.
Usually, my family is all about homemade chocolate goodies … chocolate ice cream, chocolate pudding, chocolate chip cookies, chocolate smoothies, brownies, chocolate meringue pie, chocolate cake, you name it, we love it.
But this month, step aside chocolate, it’s all about Lime Bars!

Grain-Free Lime Bars :: Gluten-Free, Refined Sugar-Free, Dairy-Free Option
If you love lemon curd and lemon bars, you will swoon for these lime bars! Grain-free and sure to tickle the pickiest of tastebuds!
Ingredients
Shortbread Crust:
- 2 cups cassava flour
- ½ cup maple sugar
- ¼ teaspoon sea salt
- 1 cup grass-fed butter, cut into cubes (you can use cold coconut oil, but it won't have the same flavor or texture)
Lime Curd Topping:
- ½ cup + 2 tablespoons light-colored honey
- 5 pastured or organic eggs
- ⅔ cup fresh lime juice {about 5-6 medium-size limes}
- ⅓ cup cassava flour
- Powdered erythritol for topping (optional - can omit or can also use regular powdered sugar if you prefer)
Instructions
Shortbread Crust:
- Preheat oven to 350 degrees F. Line 9x13x2 pan with unbleached parchment paper. Set aside.
- In a large mixing bowl, combine cassava flour, maple sugar, and sea salt. Stir to combine. Add butter. Using clean hands, mix ingredients together until the mixture is fully incorporated and crumbly.
- Pour shortbread mixture into prepared baking pan. Press and flatten the mixture into the pan forming an even layer about ½ inch thick.
- Bake for 15-20 minutes until edges are light golden brown. Cool on a wire rack for at least 20 minutes.
Lime Topping:
- In a large mixing bowl, combine honey, eggs, lime juice, and cassava flour. Whisk vigorously until mixture is fully combined. [Note: If honey is crystalized make sure to warm the honey first. I like to put the honey in the mixing bowl and set it on top of the oven while the shortbread crust bakes. This helps liquefy the honey.]
- Pour lime mixture over the baked and cooled shortbread crust. Bake for 25-35 minutes, until the filling is set.
- Allow to cool on a wire rack until room temperature, a minimum of 2 hours. Once lime bars are cooled to room temperature, you can sprinkle the powdered sugar topping on them and finish cooling them in the refrigerator.
- Cut lime bars into squares. Enjoy!
- Store leftover lime bars in an airtight container in the refrigerator up to 3 days.
