Custard is such a comforting treat. There’s just nothing like this old fashioned humble dessert. Most people love to enjoy the traditional chocolate or vanilla custard {which are perfect and delicious}. But don’t forget about LEMON custard. Swoon!

Have you ever had lemon custard before? It’s so delectable and the perfect spring-inspired dessert, snack or breakfast. Yes … breakfast, I’m a huge fan of enjoying special treats like this for breakfast.

Lemon Custard all by itself is delicious by the spoonful. But there’s no need to stop there. Turn it into a parfait! Parfaits are such a fun treat or special snack!

Berries are in season now and I’ve been kind of obsessed with them. I always look forward to the first spring strawberries and blueberries. Who doesn’t like to gobble up fresh berries? My kids go crazy for them! I do too.

To assemble these Lemon Custard Berry Parfaits, just grab a jar or parfait glass and layer beautiful sweet seasonal berries with the soft, creamy, lemon custard. It’s that simple … and so worth it.

Then go find a special place to sit {preferably a peaceful place like in your backyard or a cozy nook} and enjoy sweet bites of this simple, yet still elegant dessert.

These parfaits would be absolutely delicious topped with homemade whipped cream or whipped coconut cream too! If the custard isn’t your thing, you could also layer these berry parfaits with homemade lemon curd or homemade lime curd.

This grain-free lemon custard is full of nourishing ingredients like pastured egg yolks, grass-fed milk, grass-fed butter and a little bit of gelatin. Plus, this real food recipe only uses unrefined sweeteners, like maple syrup or honey, to keep it healthier. You can’t go wrong with the fresh berries too, no sweeteners needed there.

Lemon Custard Berry Parfait :: Gluten-Free, Grain-Free, Dairy-Free Option

Yield: 6 Servings
Prep Time: 15 minutes
Cook Time: 15 minutes
Additional Time: 1 hour
Total Time: 1 hour 30 minutes

Rich, smooth and luscious, this refreshing Lemon Custard Berry Parfait is pure bliss. Lemon custard all by itself is delicious by the spoonful. But there's no need to stop there. Turn it into a parfait! Parfaits are such a fun treat or special snack!



To Make the Lemon Custard:

  1. Prep lemons - wash, cut in half and juice through a fine-mesh strainer into a measuring cup. Set aside.
  2. In a medium saucepan whisk together starch and gelatin.
  3. Add milk to the saucepan and whisk to combine until smooth.
  4. Add egg yolks, maple syrup or honey and sea salt. Start whisking immediately to incorporate and place the saucepan over medium heat. Stir constantly over medium heat until the custard starts to thicken enough to coat the back of a spoon, about 7-10 minutes.
  5. When the custard has thickened at a low simmer, remove from heat and add lemon juice, vanilla extract, and butter. Place back over medium heat and continue whisking for about 3-5 minutes until custard thickens and coats the back of a spoon.
  6. Remove from heat and pour custard through a fine-mesh strainer into a shallow dish or bowl. Cover loosely to help prevent a film on the top of the custard.
  7. Chill in the refrigerator for at least 1 hour to firm up a bit {of course you can eat some warm, but it's best to allow it to chill some for the parfait}.

To Make the Parfait:

  1. Alternate layers of fresh berries and lemon custard in a small jar or parfait glass.
  2. Serve + enjoy!
