This is a really fun time of year to enjoy favorite flavors of the holidays. There is something about the nostalgia of holiday baking, and my girls are getting at an age now that they remember things like baking gingerbread cookies from year to year – and that is just so fun!

I truly have a huge love for cranberries, and last month my husband picked up a huge bag of cranberries at Costco thinking he would get ahead on the holiday food shopping. While I was super excited about using them for fresh cranberry sauce at Thanksgiving and using them for a new cranberry orange granola, I wasn’t quite sure how to use up a whole Costco sized bag of them!

Grain Free Cranberry Apple Crisp

On a whim one Sunday, I thought to use some of the cranberries up with some apples that needed to be eaten and do a quick crisp. We have had a cinnamon apple crisp a couple times this fall as the apple harvest here has been really abundant. It is one of my favorite desserts…but oh! The cranberry addition took it to a whole different level!

Not only is the color the cranberries give naturally gorgeous, but those sweet apples with the tart cranberries is so amazing. I added a little teaspoon of almond extract and it really pulls out so much depth of flavor.

Grain-Free Cranberry Apple Crisp :: Gluten-Free, Dairy-Free Option

Yield: 8 Servings
Prep Time: 15 minutes
Cook Time: 35 minutes
Total Time: 50 minutes

Ingredients

Instructions

  1. Wash and sliced the apples and place in a bowl, with the cranberries.
  2. Add the lemon juice, almond extract, 1/2 cup sugar, and tapioca starch and toss together.
  3. Add into a 9-inch pie plate that has been greased with butter or coconut oil.
  4. In a small mixing bowl combine the almond flour, coconut flour, butter, maple syrup, and 1/4 cup sugar using a spatula, and then crumble it over the top of the fruit in the pie plate.
  5. Bake at 350 degrees for 35 minutes.
  6. Cool for a bit before handling.
  7. Top with whipped cream, coconut whipped cream, or vanilla ice cream.
