‘Tis the season for holiday parties, work gatherings, and family get-togethers!

Making sure I have some “treats” to snack on during the holiday season events is important to me. Listen, I have spent the greater part of the last 8 years healing a myriad of health issues, and while that cookie with the frosting piled miles high might be “just one cookie” to someone else, for me that cookie turns into a disaster when it is eaten party after party.

I regularly make simple salted crispy nuts, but I started making walnuts and pecans dressed up for the holidays a couple of years ago. I love to have a big batch of them on hand come the first of December to take along with me as a dish to pass (so I have something I can have!), for teacher gifts, or as hostess gifts – they dress up really pretty in holiday bags!

Don’t get me wrong! I will definitely be making some Christmas cookies for my family this month! I love them! Sometimes it is just nice to have something on hand simpler for those holiday get-togethers where you know you won’t miss out if you skip the dessert table.

Honey Spiced Walnuts :: Gluten-Free, Grain-Free, Dairy-Free

Yield: Approx. 12 cups
Prep Time: 5 minutes
Cook Time: 8 hours
Additional Time: 8 hours
Total Time: 16 hours 5 minutes

For me, there's nothing tastier than a crispy walnut that has been tossed with a slightly sweet and salty coating. These nuts taste great as a quick snack, but try adding them to salads for an extra special treat!

  1. Put the walnuts and sea salt in a large mixing bowl with water to cover by a couple inches. Put the bowl in a warm spot (I put it under the light in my oven because our home is so cold in the winter!) for 8-12 hours. Learn why you should ALWAYS soak your nuts and seeds here (it improves digestion).
  2. Drain the nuts and return them to the bowl.
  3. Add the rest of the ingredients and combine.
  4. Spread out on dehydrator sheets and dehydrate 135 degrees for 8 hours. If you are using an oven you can use the lowest temperature setting available until they dry out – if you are using an oven you will need to stir your nuts throughout the drying process.
  5. Clean up tip! The nuts come off the trays easiest while they are still warm - and the trays clean up easier if you don't ignore them all day and just rinse them off right away...ahem! Not that I procrastinate that ever...!
