These easy, dairy-free, refined sugar-free, Real Food Fudgesicles are a healthy twist on an old favorite. With a secret ingredient you’ll never guess, they’re now packed with more protein and fiber than ever!

Ah, summer: full of warm, sunny days, and deliciously fun, cool treats. I can remember the summers growing up when my mother would surprise us with a special treat: homemade fudgesicles. They were so creamy and smooth, and the fact that she made them meant that they were surely healthy, too.

Packaged and processed food didn’t regularly grace my home growing up, and I try to keep them out of mine as well. Especially when it comes to what my children are eating. Kid foods are notorious for being filled with extras like preservatives and refined sugar, and fudgesicles didn’t escape that fate!

My family didn’t either! <insert evil-ish mom laughter> I love a good “sneak-in-something-unexpected” recipe, like this chocolate pudding made with sweet potatoes, or these grasshopper bars filled with avocados!

Garbanzo beans, also known as chickpeas, are a popular food the world over. They’re a cheap, vegetarian source of protein, and an excellent source of fiber. They also contain manganese, folate, magnesium, potassium, and iron. Like all legumes, though, they can be hard to digest because of the phytic acid in them. The key to neutralizing phytic acid, and thus making the nutrients in the beans more available, is soaking and sprouting them. It might sound rather intimidating, but it’s actually quite easy. And as a bonus, sprouting garbanzos doesn’t only decrease the phytic acid, it also increases the vitamin content! Win-win, my friends!

  1. Puree everything in high powered blender until smooth. Make sure there are no chunks of garbanzo beans!
  2. Pour into popsicle molds and freeze until solid.
  3. Enjoy!
  4. Makes 4-8 popsicles, depending on the size of your molds.
