Nothing says summertime food to me more than lemonade and fresh fruit. So why not combine them into one delicious snack that is both refreshing and good for your belly!
Strawberry Mint Lemonade Gummies fit the bill and I’m going to share them with you today.
Let’s take a minute to talk about why gummy treats are such a nutritious snack. Gummies are made with gelatin, which contains the amino acids arginine and glycine. These amino acids assist the body in the digestion process and encourage the body to use proteins more efficiently.
Gelatin-rich foods like homemade bone broth are an excellent way to get more gelatin in your diet, but using powdered gelatin to make gummy treats is another fun and tasty way!
I have several gummy recipes that are always a big hit with the family. Mango Lime ‘n Coconut Gummies are tropical version. Creamy Meyer Lemon Gummies are tart and sweet. And Elderberry Gummies with Ginger and Turmeric are great for a little immune system boost.
If you have never made gummy treats, you will find that the process is pretty easy and the results are fun and delicious!
Today’s recipe was inspired by a walk past my herb garden. I brushed up against the mint and the smell made me wonder what I could create with one of my favorite herbs. I grabbed some and headed into the kitchen. I peeked into the fridge and found some fresh strawberries and lemons. A few minutes later – Strawberry Mint Lemonade Gummies!
Important Note On Gelatin Types
When it comes to gelatin, you don’t want any old gelatin off the supermarket shelves. You want to look for 100% grass-fed gelatin from healthy animals. Just like other animal products, quality is important.

Strawberry Mint Lemonade Gummies :: Gluten-Free, Grain-Free, Dairy-Free, Refined Sugar-Free
Nothing says summertime food to me more than lemonade and fresh fruit. So why not combine them into one delicious snack that is both refreshing and good for your belly!
Ingredients
- 1 1/2 cups fresh strawberries
- 4-5 large fresh mint leaves
- 1 cup of freshly squeezed lemon juice
- 1/4 cup filtered water
- 6 tbsp. grass-fed gelatin
- 1-2 tbsp. raw honey
Instructions
- Place the strawberries and mint leaves in a blender or food processor and process until completely pureed.
- Add the strawberry mint puree and lemon juice to a saucepan and heat over medium heat.
- You do not need to bring the liquid to a simmer, just gently warm it.
- Whisk in the gelatin one tablespoon at a time, making sure you do not have any lumps before adding the next Tablespoon.
- Once you have added all of the gelatin, remove the saucepan from the heat and whisk occasionally until the liquid cools to around room temperature, 10-15 minutes.
- Add the water and honey and whisk to combine.
- Pour the gummy mixture into silicone gummy molds or a 9x9 inch pan and place in the refrigerator until set (about 2 hours).
- Please note, if you are not using raw honey, you can add the water and honey to the mixture while it is still hot. I like to retain the benefit of the raw honey, so I wait to add it after the mixture cools slightly.
- Once the gummies have firmed up, you can remove them from the molds, or if you're using the pan, cut them into squares or use a cookie cutter for fun shapes!
- Store the gummies in a covered container in the refrigerator.
