Ok! So February! We’re getting there, right?!

Well where I live it is not even close to spring, and right about February things are pretty scarce in the fresh, local produce selection.

My freezer stash of U Pick strawberries, blueberries, and cherries from the summer is practically gone, and our fall apple harvest turned applesauce is down to just a row on the shelf.

My fruit choice at the market this time of year boils down to citrus, bananas, and apples (unless I want to pay an arm and a leg for something out of season!).

Grain Free Apple Cinnamon Muffins :: Gluten-Free, Dairy-Free

Yield: 12 muffins

Cook Time: 25 minutes
Total Time: 30 minutes

Instructions

  1. Place everything but the apple into a mixing bowl and combine with hand beaters.
  2. Fold in the chopped apples.
  3. Scoop into silicone muffin cups or buttered cupcake pan.
