Food restrictions can stink. I didn’t have such a hard time with gluten. No more eggs? OK, sure, I can handle that, but dairy? Sheesh, it was like pulling off my right arm!

Coconut Milk Hot Chocolate :: Gluten-Free, Grain-Free, Dairy-Free, Refined Sugar-Free
Nothing says winter like curling up with a cup of hot chocolate and a good book. This hot chocolate is not only yummy, but it is also packed with some powerhouse nutrition.
Ingredients
- 2 cups of full-fat coconut milk
- 1 cup water
- 1 ounce of unsweetened baker's chocolate or chocolate of your choice
- 1/4 cup of cocoa powder
- 1/4-1/2 cup coconut sugar, or sweetener of your choice
- 1 tbsp. grass-fed gelatin
- 1 tbsp. coconut oil
- a pinch of sea salt
- 2 tsp. vanilla extract
Instructions
- Melt chocolate and coconut oil on low, stirring so it doesn't burn.
- Add the coconut milk, water, cocoa powder coconut sugar, salt, and gelatin and whisk until mixed completely and warm.
- Turn off the burner and add in vanilla extract.
- Remove from heat and serve. Feel free to garnish with whipped coconut cream (recipe here) or homemade marshmallows (recipe here).
Notes
We tend to like things less sweet so feel free to adjust the sweetener to your own personal taste preferences.
