Several years ago, when I was pretty low carb (a decision that helped in the short term, but harmed my health in the long-term), I decided I needed something to replace mashed potatoes. I had started using cauliflower to make garlic herb cauli “rice” (a take on my favorite white rice side at Chipotle restaurants) and quickly discovered that when it comes to veggies, cauliflower is one of the most versatile veggies out there.

I’m not alone either. Over the last 8 years, the number of cauliflower-based foods that have come on the market has exploded! What many of us had been making in our kitchen for years has now become mainstream and “cool”. Think cauliflower pizza crusts, tortillas, flat breads, muffins, and even ice cream.

Listen, I love me some cauliflower, but I draw the line at turning it into ice cream. Repeat after me: CAULIFLOWER IS NOT ICE CREAM.

Anywho, I digress. 

So, back to the recipe at hand, which, by the way, is a perfectly acceptable use of cauliflower. 😉 I steamed my cauliflower and tossed it in the blender with all of my normal mashed potato ingredients (garlic, salt, pepper, milk, and cheese) and the result was, well, fantastic!

It was WAY better than I expected. 

While I am no longer strictly keto/low carb (diets which ultimately destroyed my health and led me right into a full-blown eating disorder — check out my Deeply Nourished You website for more info on that journey), I find that I still kind of prefer mashed cauliflower over mashed potatoes. I do enjoy real potatoes (especially those creamy Yukon Golds!) every now and then, I really am a huge fan of cauliflower and my tastes gravitate towards it.

Ingredients

  • 2 pounds cauliflower, rinsed and broken into smaller chunks
  • 4 ounces butter or ghee (while many people for a non-dairy option, use a vegan butter like Miyoko's or Earth Balance)
  • 2 cloves garlic, rough chopped (can sub 1 tsp dried garlic powder)
  • 1/2 tsp. black pepper
  • 1/2 tsp. sea salt
  • 1/4 cup full-fat milk, cream, or coconut milk
  • fresh chopped parsley for garnish (optional)

Instructions

  1. Steam your cauliflower until tender. I use my steamer basket in my 6-quart soup pot and it takes about 12 minutes.
  2. Place the cooked cauliflower, butter, garlic powder, black pepper, sea salt, and coconut milk/cream/or chicken stock in your blender or food processor.
  3. Blend until smooth and creamy.
  4. Serve with fresh parsley garnished on top.
  5. This recipe freezes nicely, so make extra and portion it up for a quick side dish on a busy evening.
  6. Recipe Variations:
  7. Add a couple of big handfuls of raw mixed greens before blending. It will make the mixture green, but it's an excellent way to get more dark leafy greens in the diet.
  8. Add 1 tsp. of Cajun blackening seasoning (learn how to make your own here) for a Tex-Mex inspired puree.
