I’m always on the lookout for new ways to reduce waste when cooking for my family. I save my veggie scraps and meat bones for stock, use leftover fruits in smoothies, and turn the meal from making coconut milk into flour. Recently, I’ve been turning my kids discarded sweet potato skins into these tasty chips.

My kids love sweet potatoes any way I serve them: as fries, cookies, brownieschocolate pudding, or even just plain ‘ol roasted. Since I know sweet potatoes are naturally loaded with potassium and beta-carotene, vitamin A, calcium, magnesium, and phosphorus, I don’t mind serving them whenever I can.

Crispy Sweet Potato Skins :: Gluten-Free, Grain-Free, Dairy-Free

Yield: 4 Servings
Prep Time: 5 minutes
Cook Time: 10 minutes
Total Time: 15 minutes

These chips are tasty and easy to make. They’re a great afternoon snack or addition to a simple lunch. Eat them as they are, or pair them with your favorite salads, soups, sandwiches, or dips.

Ingredients

  • skins from pre-baked and eaten sweet potatoes
  • melted butter, coconut oil, or olive oil
  • kosher or sea salt

Instructions

  1. After baking your sweet potatoes, let them cool enough so that you can handle them.
  2. Carefully peel the potatoes, leaving the skins in as big of pieces as possible.
  3. Make sure your oven is preheated to 350 F, and line a cookie sheet with parchment paper or foil.
  4. Lay the skins flesh side up on the pans, brush with butter or oil, and sprinkle with salt.
  5. Bake for about 10 minutes, or until the desired crispness.
  6. Let cool for a few minutes before devouring.
