I created this recipe not too long after I went dairy-free for health reasons. Turns out dairy and I are not such good friends…which is a bummer because I REALLY love cheese. Like love, love, love it.
I also love ice cream and when Kimi asked me to create a summertime recipe, ice cream pie was all that I could think of. My favorite ice cream pie recipes were a thing of the past so it was time to recreate something at home that was dairy and gluten free.
It took a lot of experimenting to get things just right, but I am pretty happy with how this recipe turned out. It’s quite customizable too, so I know it will be my go-to recipe for special occasions. You could easily mix up the flavors and create a version that suits your taste buds. Chocolate perhaps? Or maybe even a mint chip version?
