Rich, creamy, decadent ice cream pie topped with sweet and juicy summer berries. This dessert shouts “Welcome Summer!” and offers a cool, creamy reprieve on a hot day. The dairy-free ice cream is paired with a date-sweetened coconut crust and makes the perfect ending to any summertime meal.

I created this recipe not too long after I went dairy-free for health reasons. Turns out dairy and I are not such good friends…which is a bummer because I REALLY love cheese. Like love, love, love it.

I also love ice cream and when Kimi asked me to create a summertime recipe, ice cream pie was all that I could think of. My favorite ice cream pie recipes were a thing of the past so it was time to recreate something at home that was dairy and gluten free.

It took a lot of experimenting to get things just right, but I am pretty happy with how this recipe turned out. It’s quite customizable too, so I know it will be my go-to recipe for special occasions. You could easily mix up the flavors and create a version that suits your taste buds. Chocolate perhaps? Or maybe even a mint chip version?

The sky’s the limit!

OK, enough chatter. At this point, you’re probably wanting me to shut up so you can eat. 😉

Want the recipe? Trust me, you do! Hop on over to The Nourishing Gourmet, where it was featured yesterday, and add this recipe to your summertime treat list! You won’t regret i! 🙂
