Highland coo or cow in Scotland

A Highland Coo (aka. cow) lounging on the countryside

Those of you who know me well, know that my heart belongs to Scotland. In 2001, I was fortunate enough to take a trip to Scotland with my sister, her future husband, and some of their friends. It was a dream come true. Not only had I always wanted to go to Scotland, while I was there, I felt like I was home. I still yearn to go back. Sometimes when I look at my photos from that trip, my heart actually hurts. And no, despite my love for the country, I did not partake in haggis while I was there. However, seeing how my food preferences and adventurousness have changed over the last 10 years, I would probably try it should I ever get to return.
