The other night, I needed a super fast side dish to go with our grassfed steaks and mashed potatoes. I had some fresh English peas that needed to be used, so I whipped this right up. It’s probably the fastest side dish you’ll ever make!
Garlic and Cheese Peas (hey, it rhymes!)

- 1 pound fresh green peas (or frozen should work fine too)
- 2 tbsp. butter or ghee
- 1 tbsp. crushed garlic
- 1/4 cup fresh, chopped parsley
- 1/2 cup grated Parmesan
- dash of sea salt
In a large sauté pan, melt the butter or ghee and add the garlic. Stir around for a minute or two and then add the peas. Mix until the peas are coated with the oil and garlic. Cover and cook for 5-8 minutes (frozen peas will cook a little faster). Remove the lid and stir. Top with the grated Parmesan and parsley and stir in. Salt to taste.
