This recipe was inspired by the 10 Cent Diet’s Piña Colada Quinoa recipe that I came across a couple of months ago. I made one batch of this right after I found the recipe and ate it all week for breakfast. I then decided to experiment with some additional ingredients to see if I could up the nutritional value of the cereal even more. This is what I came up with.

Make this hearty breakfast cereal to fill you up and start the day right!



    1. Soak the quinoa before preparing.
    2. Once the quinoa is soaked and rinsed, bring it, the coconut milk, and pineapple juice to a boil in a medium saucepan.
    3. Cover with a tight lid, lower the heat and cook for 15-20 minutes, or until the liquid is absorbed and the quinoa is tender.
    4. Remove from the heat and stir in the rest of the ingredients.
    5. Serve warm or cold — It is delicious both ways. If you want a little extra pizazz, you can top it with some dried fruit cereal topping.
