Hope everyone had a great week! It was busy for me, but my husband and I had a fun end to the week. We got to spend the night at the brand new Four Seasons in downtown Denver, courtesy of the travel management company I use for booking all the corporate travel at my employer. It was a welcome escape, even if it was for only one night. The room was amazing and we even got a bird’s eye view (from the 15th floor) of the Parade of Lights as it came down the street toward our building. But now, back to reality and the first order of business is your Weekly Recipe Wrap Up!

Crock-Pot Stuffed Bell Peppers – You know how I feel about crockpot recipes and this one hits the spot! Simple, healthy, and delicious. What more could you ask for in a meal?

Smoked Salmon and Chive Cheese Ball – I’m wanting to branch out and starting eating roe because they are fantastic powerhouses of nutrition. When I started looking for recipes, this one came highly regarded. I already love salmon and you simply use roe as a topping on this great spread. Do you eat roe? What’s your favorite way to eat it?

Carrot Scallion Latkes – Who doesn’t l0ve Latkes? As a matter of fact, I just read a comment somewhere this week that “Latkes are the world’s best food.” They are typically made with flour and potatoes, but this version is more Paleo diet friendly.

Homemade French Vanilla Ice Cream – Making your own ice cream at home is so much better than buying the chemical-laden stuff from the store. This recipe sounds so decadent that it makes me want to whip up a batch right now. Thankfully, I don’t have an ice cream maker, so it keeps me from making it whenever I want (which saves me from sitting down and eating the whole batch by myself!)

Piña Colada Quinoa – I love quinoa and this recipe is no exception. It makes a fantastic breakfast. Just use full-fat, organic coconut milk (you might as well get ALL the good stuff!).
