Chocolate Banana Ice Cream Sandwiches {Exclusive Recipe}

Now it’s time to get to the good stuff! This chocolate banana ice cream sandwich recipe is the perfect summer treat. Despite the “ice cream” being only bananas, the texture is very reminiscent of real dairy-based ice cream. The soft, nutty chocolate cookies pair perfectly with the creamy banana “ice cream.”

Chocolate Banana Ice Cream Sandwiches :: Gluten, Grain, and Dairy-Free

Yield: 4 sandwiches
Prep Time: 5 minutes
Cook Time: 9 minutes
Additional Time: 2 hours
Total Time: 2 hours 14 minutes

These chocolate banana ice cream sandwiches are the perfect summer treats. Despite the “ice cream” being only bananas, the texture is very reminiscent of real dairy-based ice cream. The soft, nutty chocolate cookies pair perfectly with the creamy banana “ice cream.”

Ingredients

Instructions

  1. Before you start the recipe, make sure that you peel and slice the bananas and freeze them for 1 ½ to 2 hours.
  2. Preheat the oven to 350°F (180°C, or gas mark 4).
  3. Combine all the ingredients, except the bananas in a bowl, mixer or food processor.
  4. Shape dough hunks into balls and flatten and form into large circles on a cookie sheet lined with parchment paper.
  5. Bake for about 6 to 9 minutes. Cookies will be firm. Set aside to cool.
  6. Once the cookies have cooled, start the banana ice cream.
  7. Take frozen bananas and put them in a food processor. Run the processor until the bananas are fully blended into a creamy, ice cream-like texture. You may have to stop the processor a few times and scrape the sides to incorporate all the bananas.
  8. To form the ice cream sandwiches, take one cookie and top the flat side with desired amount of banana ice cream, then top it with another cookie.
  9. If the banana ice cream is too creamy to hold up on its own, put it in the freezer for about 20 to 45 minutes until it’s hard enough to hold, but soft enough to work with.
  10. Store ice cream sandwiches in the freezer.
