Eggplant is sort of the forgotten summer veggie for some, getting lost among the mounds of tomatoes and zucchini, but there are so many fun things to make with eggplant! We can find eggplant at our local grocer year round, but it’s flavor (and price!) are best late summer into early fall. It’s flavor is fairly neutral, so when you cook it, the eggplant takes on whatever you are cooking it with!

Just as with most vegetables, roasting the eggplant softens and sweetens the flesh and it tastes so good rubbed with garlic and butter before you slide it in the oven! We tend to make it a quick side dish often during the summer, but if you take it a step further and puree it into a soup or dip it becomes super creamy and is so amazing.

Especially if you are on a grain free diet, having a load of fiber-full veggies in your meal plan will keep your digestion moving along. Eggplant is also filled with vitamins like B1, B6, and vitamin K, as well as minerals such as copper, manganese, and potassium. Rich in antioxidants, eggplant is a nutrient dense vegetable to keep around!
