NOODLES! I love them and needless to say, when I had to go gluten-free for my thyroid, I was so sad to have to give them up. Gluten-free noodles are just not the same.

But, I made the wonderful discovery of using veggies for noodles. They are so different from regular noodles but pack such flavor. I fell in love!

Everything from zucchini, cucumbers, and sweet potatoes can be used to make some creative, grain-free dishes. I am amazed at all the wonderful recipes that I have found when I started searching for veggie noodles.

Adding different sauce, spiced, and using different cooking methods really make each dish unique. A favorite in our house is a bacon, tomato, cucumber salad that uses mayo as a dressing. It is so simple but totally fits the BLT cravings. (I’m not the only one that craves those, right?)

I haven’t met a kid yet that isn’t willing to try a vegetable that looks like a noodle. Serving vegetables like this is a great way to get those picky veggie eaters to expand their horizons.

Be creative, when going grain free this will help keep you on track. Finding ways to make your favorite dishes with a healthier noodle will help you not feel deprived.
