I don’t know about you, but I am a firm believer that the best way to start off a day is with chocolate. Chocolate smoothies, chocolate pancakeschocolate cake, whatever kind of chocolate floats your boat. My most recent chocolate breakfast addiction is these grain-free, dairy-free chocolate banana crepes.

Growing up, crepes were an uber-special treat reserved for Easter and only ever filled with strawberries and whipped cream. I was a tad nervous trying my own hand at crepemaking, ’cause in my mind uber-special is equal to uber-difficult. But these tasty grain-free, dairy-free chocolate banana crepes are surprisingly easy! And that’s what usually floats my boat (other than the chocolate factor)!

Take a few simple ingredients most grain-free foodies have on hand, stick them in a blender, swirl them around the cast iron, cook for a minute, flip, cook for another minute, and fill with whatever your little heart desires. I like to fill them with nut butter, bananas, and chocolate chips, my kiddos prefer pb & j. However you like ’em, they’re tasty enough to be a treat, and easy enough to be a frequent one… 😉

Chocolate Banana Crepes :: Gluten-Free, Grain-Free, Dairy-Free, Refined Sugar-Free

Yield: 8 Crepes
Prep Time: 8 minutes
Cook Time: 15 minutes
Total Time: 23 minutes

  1. Preheat a skillet (I used my cast iron) over medium heat. Throw in a couple of tablespoons of coconut oil or butter to heat up.
  2. Place everything but the baking soda in the blender and puree. Let stand for about 5 minutes so the coconut flour can soak up some of the liquid.
  3. When the skillet is hot, add the baking soda and pulse to combine.
  4. Pour 1/4 cupfuls of batter onto hot skillet and quickly tilt the pan around until it's covered with a thin layer of the batter.
  5. Let the crepe cook for about 1 minute, or until the edges are starting to look dry-ish, then flip. Cook another minute and remove to a plate.
  6. Repeat with remaining batter.
  7. Fill as desired and devour.
