Ah, dinners in the slow cooker. They’re perfect for busy moms… or dads… or single people. In the morning, stick it in, let it cook all day, and it’s ready for dinner. There’s usually not much prep, and the rewards are pretty tasty!

When I first started using slow cookers, I was nervous to do meat in them. I am notorious for forgetting to thaw meat, and my husband is a tad picky about it being too dry or something like that.

Then I hit a revelation: I didn’t need to thaw the meat first! (Actually, a game hunter in Montana told me this, but anyway.) By cooking at a higher temp, I could stick a frozen roast in the slow cooker and it would still be done in time for dinner. No more meat thawing frustration for me!

This is pretty much how I do meat in the slow cooker now. Whole chickens, pork, this roast… straight from the freezer into the slow cooker!

This roast usually takes about 6 hours in my Crock-Pot, but remember, every slow cooker cooks a little differently. Don’t forget that if you own an Instant Pot, you can simply use the slow cook feature on there. No need for a separate appliance (just one of the MANY reasons we love the Instant Pot). Slow Cooker Rosemary Roast Beef

Yield: 8 Servings

Making a delicious roast for dinner doesn't get any easier than this! This set-it-and-forget-it recipe allows you to get on with your busy day and not have to worry about dinner!

Ingredients

  • 1 yellow or white onion, sliced or diced
  • 4-5 cloves of garlic, minced
  • 5 large carrots, cut into sticks
  • 1 pound yukon gold potatoes, cut in halves or quarters, depending on size (if you don't want to use potatoes, you can leave them out or sub for another root veggie)
  • 1 3-4lb. roast of whatever part of beef you want
  • 2 cups kombucha (or 1 1/2 cups beef stock + 1/2 cup red wine vinegar)
  • salt & pepper, to taste
  • 1 tbsp. fresh rosemary
  • 2 tsp. fresh thyme

Instructions

  1. Prepare your onions, garlic, carrots, and potatoes.
  2. Remove the roast from the packaging.
  3. Place the onions in the slow cooker and put the roast on top.
  4. Place the carrots and potatoes on the top.
  5. Dump the kombucha (or broth + vinegar) over the roast.
  6. Sprinkle with salt, pepper, garlic, and rosemary.
  7. Turn the slow cooker to low and cook for about 6-8 hours, or until desired doneness.
  8. Carve and serve with the kombucha au jus on the side.
