They say less is more and I am really starting to believe it.

We had a kitchen fire recently for which I had to use a fire extinguisher.

By the way, if you don’t already have a fire extinguisher in your home please go out and get one. It was pretty scary having two kids, two dogs, and myself in a house with a fire. Not fun. I am SO grateful my hubby constantly quizzes me on where we keep the fire extinguisher and that I was able to use it in time. End PSA. 🙂

Luckily no one was hurt and there was no significant damage but that extinguisher dust goes everywhere. And when I say everywhere, I mean everywhere. A thick layer of white “stuff” covered every inch of our house.

Needless to say we were out of our house for 4 or 5 days while a cleaning crew cleaned and boxed up every single one of our possessions.

We came home to an eerily empty house and realized that we had lived with so little while we were gone. We realized when it came down to it, we really didn’t need much and that we owned far too many “things”. More than that, we realized that for us excess stuff = stress.

When the boxes of our things came back we had an embarrassing amount of things to go through. There were clothes we never wore, toys the kids never played with (which is almost all of their toys), the food we never ate or couldn’t eat (why we kept this stuff I’ll never know), decorative bowls we had no place to display, shoes, jackets, useless kitchen appliance … arghhh!

So out, out, out with it all!

Well, almost all.

We donated, threw away, and returned items to their owners until we were red in the face. It was, and is, a process, but it feels SO much better. We’re happier, the kids are happier and surprisingly more entertained. The living room is almost void of toys and they find far more to do than they did before, who would have thunk it? I guess less is more? For us anyway!

So with this new-found “love of less” you can imagine that I find simple but tasty recipes exciting.

And this recipe is simple – it contains only a few ingredients (all of which I stock regularly). It is no-bake, autoimmune paleo (which is music to my ears these days), contains no added sugar (it’s all pineapple baby), and most importantly it is very delicious!

What is even better is that you can make them two ways!

The first way is with a mixture of coconut oil and coconut butter, which gives you a more pronounced pineapple flavor. The second way is with just coconut butter, which gives you a creamier final product. Either way, I am sure you will enjoy this refreshing treat.

A few notes:

How sweet your pina colada bars are can depend on the quality and ripeness of the pineapple. Although I enjoy these bars with no added sugar you may want yours a little sweeter. You could add a touch of honey, maple syrup, a couple of pureed dates, or a few drops of stevia.

When you are mixing these, the texture may lead you to believe that they will not hold together but don’t worry, they hold together fine after they have been refrigerated. They will not be hard but will hold together very well.

I have made these with both toasted and untoasted coconut. I like both but in the summer months, I prefer the freshness of the untoasted coconut.

(Sorry for yelling, but I get asked this question almost every day, so I wanted to make sure the note stood out!)

Coconut butter is what makes the base of the recipe and it cannot be switched out for another ingredient. Coconut butter is finely ground coconut meat, similar to a nut butter.
