Vanilla Maple Cinnamon Nut Crunch (Gluten, Grain, Dairy Free)

The warm vanilla maple flavor is perfectly offset with the spiciness of Vietnamese cinnamon (my favorite kind of cinnamon, though you can add whatever type you like). This makes the perfect mid-day snack or topping for homemade ice cream.

Oh, and before I send you on your way to get the recipe, I wanted to let you know that this recipe actually freezes really well. I was cleaning out my freezer recently and found a bunch of odds and ends bags of nuts and seeds. So I whipped up a batch of this, not realizing just how much it would make. I knew it would be way more than we could eat anytime soon, so I placed the mix in a couple of airtight glass storage containers and threw them in the freezer. When we pulled them out to eat them, they were still super crispy and super delicious. As a matter of fact, hubby said he prefers the texture of it in its frozen state. 🙂
