Paleo has been getting a lot of buzz lately. It is rapidly growing in popularity as an eating style, and many people are finding success following this form of eating. I was pursuing a Real Food diet when I kind of stumbled upon Paleo online. I wasn’t at all convinced that this was the way I wanted to eat for the rest of my life, but I decided to give it a 30 day trial. The “restrictions” would serve as an elimination diet for many common allergens, and the emphasis on lots of vegetables would serve as a sort of veggie boot camp for me–forcing me to try new things and learn to incorporate lots more vegetables into my daily life…
My husband and I embarked on the 30 day Paleo trial on April 1st, 2012. By April 30th we were in agreement that we did not want to go back. So now we live 80/20-ish, and we feel so much better than we have in years! We’ve both shed pounds (I’ve gone down two pants sizes), have more energy, and fewer aches and pains. And we LOVE the food!
