Spicy Roasted Corn on the Cob

Summertime means corn! I love how easy it is to get in Colorado. Not only can you find local corn at pretty much any grocery store or farmers market, as you drive around the city, you’ll also see stands selling corn on the sidewalk! One of my favorite ways to eat corn is marinated in some spices and butter and then roasted on the grill.

Spicy Roasted Corn on the Cob

When it's corn season, one of the best ways to eat it is roasted with some delicious seasoning. This recipe is so easy to make, and may be your new way to eat corn on the cob.

Ingredients

  • 4 ears of corn with the husks and silk removed
  • 3 tbsp. melted pasture butter
  • 1 teaspoon blackening seasoning
  • 1 teaspoon dried chili flakes
  • Sea salt, to taste
  • Black pepper, to taste

Instructions

    1. Rinse the ears of corn and pat dry.
    2. Melt the butter and use a brush (or your hands) to coat each ear of corn completely.
    3. Sprinkle the blackening seasoning, dried chili flakes, salt, and pepper on the cobs, rotating the cobs for even coverage.
    4. Place on a hot grill and cook for 12-15 minutes, rotating every few minutes to ensure even cooking and browning.
    5. Serve with lots of butter.
