Weekly Recipe Wrap Up - Recipes and Food News

Another week has passed. And, another week of fantastic recipes. All those creative minds out there! I am constantly amazed at what people come up with! Simple or complex, this week offered some great recipes. In addition to my recipe wrap up, this week I realized that I am constantly inundated with all sorts of fantastic food and food politics news. It’s too much for me to keep on, so I thought I’d start sharing some of the top stories of the week in case you missed them too! Let’s get started.

Weekly Recipe Wrap Up

Almond-Crusted Halibut Cheeks with Orange Beurre Blanc – The title sounds fancy, but it really seems like it would not be hard to make! I love citrus and fish – such a great combo!

Banana Coconut Cream Bread – If you’re eating bread and wheat, this is the recipe for you! I’m sure you could substitute almond or coconut flour for the wheat flour, however, you’d have to play with the proportions. It’s definitely not equal to wheat. I bet this bread is rich and flavorful. Hot out of the oven, topped with butter? YUM!

Grain-Free Apple Flax Muffins – Here’s a tasty sounding grain-free muffin recipe. Very nutrient dense. You could even leave out the sugar for a lower carb recipe and it would still taste great!

Nettles Pesto – Have you ever eaten nettles? I haven’t, but this recipe sounds intriguing. They are full of vitamins and minerals, so they are definitely good for you. Not even sure where I’d get nettles in Denver. I don’t have a bush of them growing in my yard! Maybe I should pay Elana a visit – Boulder’s not too far away. 🙂 Just kidding of course!

Avocado Lime Dip – I have a serious love affair with avocados. If I could afford them, I would eat at least one every day! I love them THAT much! This dip sounds heavenly and easy! Can’t wait to give it a try!

10 Simple – and Simply Delicious – Dips for Artichokes – In addition to avocados, I also love artichokes. I have been eating a fair number of them this spring and I am looking for some new dips. I love my mayo/butter/lemon juice combo, but maybe I need to mix it up a bit!

Chipotle Bacon Deviled Eggs – What a brilliant way to spice up the plain old deviled egg. I bet my hubby would grub these down in an instant. I think I’ll whip up a batch soon and give it a try. I could always eat more pastured eggs! 🙂

6 Foods to Eat if You’re Skipping Meat. Most you know that I don’t think that a vegan or vegetarian diet is healthy long-term, however, I am an advocate of following whatever principles work best for you. This is a good article, except promoting the consumption of “whole grains” (which I think is a big fat lie) and fortified soymilk. No one should EVER drink soy milk, vegetarian or not!

Sugar struggles. Reading this article reminded me that I never finished the series I had started on sugar. I got Part 1 and Part 2 written, but I completely forgot about part 3. I will finish that up and promptly deliver!

Obama administration to approve drought-resistant GM corn that USDA says grows no better than natural corn. This was a major disappointment, though I don’t know why I’m surprised. This country needs a president who will stand up for our food rights and not let Monsanto dictate the food supply. However, since it’s all about the $$$, that will probably never happen.

Court of Appeals Dismisses Monsanto’s Appeal of Biotech Beets Case, Preserves Victory for Farmers, Environment. On the same day that the GM corn article came out, I cam across this article, which made me happier. But, it seems like for every step forward, there’s a few steps back!
