Grain-free Swedish Pancakes – This has got to be one of the coolest recipes I’ve ever seen, thanks to my friend, fellow real food blogger, and butter lover, Soli. These pancakes consist of eggs, cream, and butter. No starch or grains in sight! How awesome and delicious. I am whipping a batch of these up today!

I Am Amazing: Raw Lemon Meringue Pie – Another recipe that is incredibly unique. The use of Irish Moss is something that I have never, ever seen! I wouldn’t use agave for this – I would try honey or coconut sugar. It might affect the texture to use coconut sugar, but it would allow for a lower glycemic product. It’s just too unique not to share!

Ramp It Up!! Part 1 – Pickled Ramps – I’ve never done anything with ramps, but they’re on my list of veggies i need to try. This might be a great way to start out! You could add a little whey to make it cultured.

Sesame Salmon Burgers – I love salmon and since I’m trying to get more fish into my diet, this is a perfect dish to whip up.

Red Potato Salad with Scallions & Radishes – I’d never thought to add radishes to my potato salad, but that sounds like a great addition. The flavor and the crunch would accentuate the potatoes quite nicely. I will keep this in my stack of summer picnic recipes.

Apples Fried in Butter Topped with Yogurt, Sprouted Nuts, Raisins, and Maple Syrup – What a simple recipe, with fancy results. I bet this would taste wonderful with some homemade vanilla ice cream or fresh whipped cream! Yum!

That does it for this week’s recipe wrap up. What were your favorite recipes of the week? Leave me a comment and let me know!

Hi Jessica – just wanted to stop by and say hello, I’ve been wanting to do that for awhile. Love your blog! Great recipe list, thanks for including mine here…some of those others look good too. Maybe the salmon minus the bread. I can’t eat them though because I am currently on the GAPS diet…maybe in 6 months or so. Hope you are having a great night!  :)

Hi Raine – thank you so much for stopping by and for your kind words! I’m glad you like the blog. I’m actually going to start working in a slight redesign of it in the next week or two. I feel that I could do a little better on the layout, so I’m exploring my options right now! :) I hope you’ve had a wonderful weekend too! I think I remember seeing that you went horseback riding today? I grew up with horses, so they hold a very special place in my heart! Talk to you soon!
