Weekly Recipe Wrap Up

Hi everyone! How did the first week of 2011 treat you? I hope everyone had a great week. Mine was super busy, but very productive. As usual, the food world didn’t slow down and there are a lot more great recipes out there to share! Check these out:

Cream of Wild Mushroom Soup (gluten free) – I love cream of mushroom soup and it is also a soup that I use a lot in my cooking. My goal for 2011 is to no longer buy the soup from the store (I know, I know, old habits die hard), but to make my own from scratch. It will take a little extra planning on my part, but it’s totally doable and very much worth it!

Fermented Cranberry Relish – Now this just sounds wonderful. It reminds me of the orange cranberry relish that my aunt makes. Hmm … what did I do with that recipe? Oranges and cranberries are made for one another and the sweet, tart, tangy flavor of this relish is sure to please the pickiest palates!

Pink Grapefruit & Pomegranate Marmalade – Canning is great to do year round so you can get a wide variety of seasonal fruits and veggies stockpiled. This marmalade sounds absolutely heavenly. The only problem I have with canning jelly, jam, and marmalade is the amount of sugar you have to use. I haven’t done a lot of experimenting with lower sugar methods, so if anyone has, please share your knowledge if you’re willing.

Brussels Sprouts with Canellini Beans and Almonds – Does anyone really like Brussels sprouts besides my mom? I’ll eat them every now and then, but they are definitely not on my list of favorite veggies. This being the case, I am always looking for new ways to make them a little more enjoyable and this looked like an interesting recipe. What’s your favorite way to fix the sprouts?

Corn Chicken and Sweet Potato Chowder – Mmmm … chowder. Creamy chowder and cold winter days just seem to go hand-in-hand. This is a very simple recipe with wholesome ingredients. A big bowl of this sure sounds good right about now!

Italian Crockpot Meatloaf – I was just thinking about how I haven’t made meatloaf in quite sometime. I think meatloaf gets a bad rap. I love meatloaf. I think most people’s memories of meatloaf are from grade school cafeterias, where the mushy, sloppy, grayish-hued chunk of goo was less than appetizing. This recipe however? I’m pretty sure it will change your mind about meatloaf!
