This recipe was inspired by a recipe on Elana’s Pantry, a gluten-free blogger from Boulder, CO. I was wanting some different ways to get more greens into my diet when I stumbled on her recipe and then my recipe evolved from that. While some might think this is the weirdest combination ever, don’t knock it ’til you try it! It’s amazingly delicious and refreshing!
Orange and Green Smoothie
2 small servings or 1 large serving
1 cup coconut milk tonic
1 small orange, peeled and separated (Valencia’s are great – lots of juice and flavor)
4-6 large leaves of Swiss chard (or Kale, spinach, or any other mild green)
6-8 drops of stevia
ice
In a high-powered blender, mix the coconut milk, orange, chard and stevia together until smooth. Add ice until you obtain your desired thickness. Some like it really thick, others like it a little less frozen. Serve immediately.
